Mini Desserts - One Bite Pies, you can eat more than one!

We scoured the internet for the perfect one-bite desserts to serve at Thanksgiving! We found the perfect recipe from Live Well Bake Often, they are Mini Pies in different varieties you can make at home like apple, cherry or pecan. After a big Thanksgiving meal, it's sometimes impossible to eat another bite but with these mini versions you can have 2 or 3. The fillings are easy to make, you can use store bought pie dough and they bake really quick in the oven. We can't wait to serve these mini pies, they look super easy and delicious. Ok, we have to follow the recipes and it looks like we're making a few dozen, so let's starting baking!

QUICK TIPS WE LEARNED AFTER TEST:
1. Cut your dough big enough to fit almost to top of muffin tin, this allows more filling and assures it won't spill out. But we baked some pie dough not so high and they were still good, made it easier to eat because they're smaller.
2. Get creative with your pie filling, bake what your guests will enjoy best. If you're pinched for time, there is nothing wrong with canned filling. It's still homemade in the oven and your guests will enjoy them.
3. Bake these a few days ahead!
