FOR THE RECIPE THAT INSPIRED TODAY'S TASTE TEST:

QUICK TIPS WE LEARNED AFTER TEST:
1. If you can't get your hands on rice wine vinegar, try white wine vinegar or champagne vinegar. Same with Creme Fraiche, you can switch with sour cream.
2. You may be tempted to use regular mayo but you must try the Kewpie mayo that's easily accessible in any Japanese store - and avail at your local grocers. It's thicker and will give you a creamier consistency.
3. Use Japanese milk bread if you can, which is also avail at Japanese stores. If you can't get it, use a firm bread like brioche. White bread is fine too but a little too soft.
4. Use a timer, it's important you follow the recipe or else your eggs won't be that perfect creaminess.
One recipe, tested by two cooks!
