Personally, I used to think I wasn't a lamb person. A lot of lamb dishes I find too gamey or overcooked. Then I had Tommaso's family recipe for arrosticini – and it changed my mind completely about enjoying the grassy simplicity of well-prepared lamb. No strong gamey flavor, just tender, juicy, melt-in-your-mouth deliciousness. My eyes were opened to an untapped side of Italy I had been missing.

As a traveler, I had been to Florence, Tuscany, Venice, Lucca, Bologna, and Pisa, but I had never crossed the Apennine Mountains to the western region of Abruzzo, a journey that even many Italians will never make.

Tommaso's passion for his hometown cuisine is contagious. He wants the food of Abruzzo and the traditions of his family to be as widely known as Napolese or Sicilian cuisine, starting with the lamb.
