How to Preserve, Cook, & Enjoy Tomatoes the Middle Eastern Way: New York Shuk's Matbucha Recipe
Tomato lovers, there's a new, jarred tomato condiment for you to get your hands on, enhanced with the bold flavors and traditions of the Middle East, meet New York Shuk Matbucha. Ron & Leetal Arazi, the founders of New York Shuk, are the first food makers to make this beloved tomato condiment available in supermarkets. It's so approachable, so versatile, it's made to eat every day!
Back in North Africa and Israel, the making of matbucha is an intimate family tradition, where generations of families get together to process and cook down tomatoes to celebrate the bounty of tomato season. It's good in sandwiches, as a "cooked salad" dip, as a topping plated with cooked vegetables and meats, or as a base for stews or shakshuka. In a way, it's very similar to the familiar tradition of Italian tomato sauce, but with different local Middle Eastern spices and seasonings cooked into the recipe. Instead of Italian sweet basil, parsley, or onions, you'll find hatch chilies, paprika, and preserved lemon paste. Enjoy the video!
