How to Score For EAR 'Ep01' 2 ways Comparing Side by Side Using Open Bake Method! 歐包兔耳朵怎麼割!

In this Episode 1 scoring for rabbit ear video I am demonstrating 2 ways to score the sourdough bread. One is the most commonly used technique which is to score right before put into oven, another way is to score after 5 mins bake in the oven. You can see the difference between these two which I bake them side by side using open bake method on pizza stone. Check out this video and let me know what you think in a comment section.
This is just episode 1, I will be doing more experiment and comparison in the near future!

This 5minscore technique is from a famous instagramer @sourly I learnt alot from his IG, do visit his IG for more scoring ideas too.

Overnight Proofing No Knead Sourdough

300g flour Recipe:
- 255g(85%)high protein bread flour
- 45g(15%)Whole-wheat flour
- 30g(10%) Active starter***
- 210g(70%)Water
- 6g(2%) Salt

Steps:
1.Mix all the above ingredients in a large bowl
2. Make sure all ingredients are well incorporated (no dry flour to be seen)
3. Cover and rest for 60mins
4. Perform stretch and fold the cover and rest for 30mins
5. Perform another stretch and fold then cover to proof at room
temperature(26-28C)for 8hours or till double it’s size.
6. Shape and transfer to Benetton basket
7. Bake after 30mins rest in benetton basket or cold retard up to 48 hours and bake at your preference

Oven setup:
Preheat Pizza stone and Rocks at 250C for 30mins
Bake 20mins with steams @250
Reduce to 210C and continue for another 18mins
