In this video I am showing you how to make two sourdough at once, and open bake on a pizza stone. Including scoring, how to create oven spring without dutch oven. Also including tutorial on how to mix two different colors to create swirl. Hope this comprehensive step by step guide helpful to all sourdough bakers out there.
Purple Sweet Potato Swirl Sourdough
Recipe & workflows for tropics climate:
White Dough ⬇️
240g(80%) High Protein Bread Flour
60g(20%) T65 French Flour
225g(75%) Water👉🏼 Mix 210g for autolyse and reserve 15g for salt
60g(20%) Starter 👉🏼use at peak
6g (2%) Salt
Purple Dough ⬇️
240g(80%) High Protein Bread Flour
60g(20%) T65 French Flour
225g(75%) Water👉🏼 Mix 210g for autolyse and reserve 15g for salt
60g(20%) Starter 👉🏼use at peak
6g (2%) Salt
10g Purple Sweet Potato powder(you can replace with other colors at your preference to create swirl)
Workflows timeline:
0900 Feed starter @1:1:1 30g ratio
1200: Autolyse (incorporated flour and 210g water) in two separate bowl
1300: Mix starter to dough (my starter took 4hrs to peak) gently mix-in don’t over-stretch the dough, it may breaks the gluten and resulting sloppy dough.
1320: Add salt (dissolved salt with 15g water) mix-in the dough slowly do not over-stretch the dough
13:40: Perform first set of stretch&fold
1400: Perform second set of stretch&fold
1445: Transfer dough to a square glass dish and Preform first set of Coil Fold
1530: Perform second set of Coil Fold
1615: Split both color and white dough to 2 equal parts(total 4 parts make into 2 dough):
1. Spread each part to 10cm*30cm/4”*12”)
2. Stacked up 1 part white and 1 part color and
rolled it up(do the same to second dough)
3. Put back to the square dish
17:15: Shape and put into Benetton basket (I shape one BATARD & one BOULE)
1720: Rest 20mins in the basket at room temperature
1740: Cold retard in fridge at 4C/39F or lower
Day2: Bake anytime at your convenience
