Simple & Delicious Duck Egg Caramel Pandan Kaya "鴨蛋焦糖香草KAYA" Karamel Pandan Kaya Telur Itik
Caramel Duck Egg Pandan Kaya
8 Duck egg (can replace with grade AA egg)
30g concentrated Pandan juice
530ml Coconut milk (santan)
250g sugar (300g for those who like it sweeter)
50g sugar for caramel
Step:
— 8 egg in to a bowl
— whisk the egg slightly
— add in coconut milk and pandan juice
— add sugar whisk till dissolved
— sieve into a large stainless steel bowl
— fill 1/3 water and bring it to boil
— double boiled the kaya (make sure the base don’t touch the boiling water)
— put to medium heat, keep stirring for 4-5min or till it thickened
— after it thickened reduced to low heat and cover and cook for (60mins). **DONOT open lid in between.
— take a small pan/pot pour in 50g sugar and DO NOT put any water. Heat it with low heat
— after it hit the malting point continue cooking till dark brown. Keep monitor while stirring it prevent it from over cooked and burnt.
— add in20g hot water and dilute the caramel then off the heat immediately.
— pour diluted caramel into cooked kaya and mix-in.
— use whisk you stir till desire smoothness.
— let it cooled in room temperature then save it into container and keep in refrigerator.
