Easy Single Proof Sourdough Soft & Cheesy Milk Bun 天然酵种 奶酪面包 超软 How To Make Milk Bread

Sourdough Soft & Cheesy Milk Bun

Recipe for 1 tray 22x22cm(square pan)
*video shown is for two trays

Sweet stiff starter
75g off peak starter(feed one day before)
75g bread flour
20g water
20g sugar
(Mix all the above ingredients in a jar let it proof about 4 hours in room temperature(28C) till it’s triple (3x)

Bread dough:
250g bread flour
90g milk
40g Heavy/cooking cream
25g fine sugar
3g salt
1 Large egg
60g cream cheese
All the sweet stiff starter
25g unsalted butter(softened)

Steps:
1. Make sweet stiff starter

2. When sweet stiff starter is triple mix in all the above ingredients except butter with electric mixer for 5mins

3. Add butter into electric mixer mix till windowpane is form

4. Take dough out from electric mixer split to two equal part, put one part back to mixer and add 4 drops of desire color gel(I use candy pink) continue mixing till the color is incorporated (this step is optional if you just want plain color)

5. Now we have two colors split each color to 8 equal parts make it into round balls.

6. Cover and rest for 15mins, reshape as shown is n video then arrange 4x4 into square pan

7. Let it proof 3.5-5h or till double it’s size, dust a thin layer of bread flour on top when ready to bake

8. Bake 170C for 35min, cover the top with aluminum foil after 10mins to achieve pastel color
