Buttermilk Fried Chicken recipe
Brine chicken in a gallon of water, 1 cup kosher salt (or 1/2 cup table salt) and 1/4 cup brown sugar over night. Next morning, remove chicken from brine and place in buttermilk bath for 4-6 hours. Prepare seasoned flour with 4 cups flour, 2 teaspoons of kosher salt, 1 teaspoon pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1 teaspoon paprika. Dredge chicken pieces in seasoned flour; place on rack for 30 minutes before frying. Fry in 360 degree oil until golden brown and chicken floats. So good!!!!

Italian Sub recipe; Makes 12 sandwiches
-6 (9 inch) Hoagie Rolls
-3/4 pound deli-sliced provolone cheese
-3/4 pound deli-sliced Genoa salami
-3/4 pound deli-sliced boiled ham
-3/4 pound deli-sliced mortadella
-3/4 pound deli-sliced capicola
-1 head iceberg lettuce, finely shredded
-1/3 cup sliced pickled pepperoncini
-2 tomatoes, thinly sliced
-1/4 thinly sliced red onion
2 teaspoons dried oregano
-6 teaspoons red wine vinegar
-6 tablespoons extra-virgin olive oil
-salt and pepper to taste

Layer the cheese and meat on the bottom half of the bread. Top the meat with the lettuce, tomatoes, onion and pepperoncini. Drizzle each sandwich with 1 tablespoons olive oil and 1 teaspoons vinegar. Sprinkle with the oregano. Season generously with salt and pepper.

Drizzle the cut side of the bread top with the remaining 1 tablespoon each vinegar and olive oil, then place on top of the sandwich. Cut each roll in half. Makes 12 sandwiches.
