Steak Salad | French Onion Soup
Steak Salad;
6 ounce spring mix lettuce
1/2 red onion, very thinly sliced into rings
pint cherry tomatoes, halved
1 large carrot grated
4 ounces Gorgonzola, coarsely crumbled
Salt and freshly ground black pepper
1 pound steak (such as New York, rib-eye or
filet mignon, or sirloin), pan-fried or grilled and chilled
Red Wine Vinaigrette
1/2 cup red wine vinegar
3 tablespoons lemon juice
1 tablespoon honey
1 teaspoons salt
1/2 teaspoon ground black pepper
1/2 cup olive oil
Directions:
In a large bowl, combine lettuce, red onion, shredded carrot and cherry tomatoes, and the cheese. Toss the salad with enough
vinaigrette to coat. Season the salad with
salt and pepper, to taste.
Cut the steaks crosswise into thin slices. Arrange the steak slices atop the salad and drizzle more vinaigrette over the steak
slices and serve.
Red Wine Vinaigrette:
Yield: 1 2/3 cups
Mix the vinegar, lemon juice, honey, salt, pepper, Dijon mustard, and olive oil in mason jar; shake for a minute or two.
Blue Cheese dressing also goes very well with this salad.
Blue cheese Dressing;
-1 cup mayonnaise
-1/2 cup sour cream
-1/2 cup buttermilk
-3 dashes Worcestershire sauce
-4 oz blue cheese crumbles
-1/2 teaspoon salt
-1/2 teaspoon black pepper
Mix all blue cheese dressing ingredients together in bowl.
To put salad together; start with lettuce wedge, blue cheese dressing, tomatoes, bacon and onion. Drizzle balsamic vinegar around edge.
French Onion Soup
3 tablespoon butter
3 pounds sliced onions
salt to taste
1 bay leaf
4 stems thyme
2 cloves garlic minced
1 /2 cup sherry
4 cup chicken stock
4 cup beef broth
1 tablespoon better than beef bullion
1 baguette cut into 1/2 inch slices
4 ounce shredded swiss/gruyere cheese
Sauté onions in butter until very caramelized. Season with salt, bay leaf, thyme and garlic. Deglaze pan with sherry. Add chicken stock and beef broth and bullion base. Simmer for 30 minutes. Place bread on sheet tray; cover with cheese and place in 350 degree oven; bake until cheese melts. To serve place soup in bowl and place cheese bread on top.
