The Silkiest Sourdough Orange Brioche 「 橘子布里欧修面包 」
Indulge your family a cozy breakfast or tea-break with this wonderful enriched brioche. Flavoured with homemade candied orange peels and intensely butter rich bread. This yield a superb paper-thin crust and silky crumb. It’s pretty incredible if you asked me!
STARTER / LEVAIN BUILD
60g Starter
60g Flour
60g Water
*Refresh a couple times prior using to achieve optimum results
RECIPE
270g Strong Bread Flour
150g Active Starter
2 Eggs (approx 90-110g)
30g Sugar
40-45g Milk
30g Oil
50g Butter
5g Salt
15g Orange Paste
100g Orange Peels
1g Yeast (optional)
EGGWASH
1 Whole egg
Dash of milk
1 Orange zest
Sugar Pearls (optional)
NOTE:
⚠️ Use strong bread flour with 12-13% protein
⚠️ Strong and active starter is highly recommended to leavened enriched dough. If your starter is weak, suggest to use 1g instant yeast hack!
⚠️ Proofing time vary from 5-8 Hrs @ 28C, depends on strength of starter
⚠️ Omit orange paste if you don’t have any. But it can give a superb aroma. Alternatively you can replace to 1 tsp vanilla essence/ paste or orange zest
⚠️ Feel free to add raisins or cranberries of your choice
