Fluffy Seeded Oatmeal Bread | Sourdough Shokupan | 超级松软燕麦天然酵母面包

A good sandwich starts with good bread, and this Fluffy Seeded Oatmeal Bread adds healthy nutrition into your family's diet. Oatmeal gives an extra softness and moisture to the bread, without the heaviness or chewiness which is lighter than the usual nut-and-seed loaf. Plus, it gives a natural flavour of sweetness and creaminess, ideal for thick slices. With the combination of both poppy and flaxseeds, they're somewhat crackly as you bite and making a perfect contrasting textures in soft baked goods!

Fun fact: this recipe is specially created for my grandma. As much she concern about her health, she only eats plain oat porridge for breakfast most of the time. So decided to make something different for her. She’s my inspiration for this recipe!

STARTER / LIQUID LEVAIN BUILD
20g Starter
20g Flour
20g Water
*Refresh a couple times prior using to achieve optimum results*
(Takes approx 4-5 Hrs to PEAK @ 28C)

SWEET STIFF LEVAIN BUILD
50g Active Sourdough Starter (100% Hydration)
50g Flour
12.5g Water
12.5g Sugar
(Takes approx 4-5 Hrs to PEAK @ 28C)

MAIN DOUGH
180g Bread flour
20g Wholewheat Flour
All of the sweet stiff levain
20g Sugar
3g Salt
10g Milk Powder
25g Instant Oats (50g Milk)
10g Poppy Seeds
10g Flaxseeds
120-130g Milk
25g Unsalted Butter

Rolled oats (For coating)

Oven: Bake at 180C @ 35-40 mins or until light golden brown

NOTE:
⚠️ Final proofing time vary from 3.5 - 4 Hrs @ 28C, depending on strength of starter
⚠️ Kindly adjust hydration 10g +/- accordingly as every flour has different water absorption level
⚠️ Kindly adjust baking time according to your oven
