⚠️ DANGEROUSLY ADDICTIVE ⚠️ Lets recreating that nostalgic Chinese New Year snacks with me today! If you're feeling nostalgia like me, take a trip down memory lane by making some sourdough chips together. I know its too early for it, but why not right? These are not ur usual CNY nor sourdough discard recipes, but it is a happiness in a snap! Thin layers of crispy baked chips with a selection of both sweet and savoury goodness into 1-2mm* perfection. I bring you the most indulgence flavour: Brownie-almond, Apam balik (peanut pancake turnover), Parmesan cheese and Salted egg yolk chips!
Crunchy delights baked to golden brown by only using sourdough discards and few other simple ingredients. Easy, effortless and delicious! Now you don't have to worry "too much discards" piling in the fridge now. Let's make some sourdough chips at home. Believe me, these are EXTREMELY addictive!
BROWNIE CHIPS
150g Sourdough starter/ discard
15ml Condensed milk
30g Sugar
2 tbsp Cocoa powder
20g Melted butter (salted)
Pinch of salt
dash of milk (optional)
*almond flakes for topping
APAM BALIK (PEANUT CHIPS)
150g Sourdough starter/ discard
50g Cream sweet corn (puree)
10g Sugar
20g Coconut cream
20g Melted butter (salted)
Pinch of salt
*crushed peanuts for topping
PARMESAN CHIPS
150g Sourdough starter/ discard
25g Parmesan cheese
20g Milk
30g Melted butter (salted)
Seasalt flakes
Handful of chopped fresh parsley
SALTED EGG YOLK CHIPS
150g Sourdough starter/ discards
20g Salted egg yolk powder
15g Milk
10g Sugar
20g Melted butter (salted)
1/2 tsp Chicken stock powder (optional)
Fresh curry leaves
Bake at 160C (with fan) @ 15-20 mins
or until dried and crispy
NOTE:
⚠️ 1 recipe yield 2 trays (1-2 bottle of chips)
⚠️ Kindly adjust hydration based on starter/ discard consistency
⚠️ Baking time vary from the thickness of the batter
⚠️ Use NON-STICK baking paper
