To me, Ghormeh Sabzi is not just a dish. It means the scent of my ancestors home, it means Mom’s ultimate cooking, it means love of grandmother’s house next to each other. It simply means most delicious and enjoyable dish of the world. Now I know why Gormeh Sabzi is so tasty, it’s because it’s being prepared with Mom’s Love & patience. Ghormeh Sabzi reminds me of my grandmother house. A simple yet perfect Sofreh. It reminds me the joy of cleaning & chopping the fresh herbs & the aroma of Persian rice. The nap of the afternoon & whispering of the tiny birds on the garden trees. Grand Ma, Today I made this Gormeh Sabzi to the memory of the beautiful days I spent with you in a house that you are no more in it. I made it so I could bring back a glimpse of those moments from the past.

ingredients for 4
herbs: scallion or chives 200g, parsley 150g, coriander 100g, fenugreek 50g - 1 cup oil to fry the herbs
lamb meat 300g
red beans 1 cup
1 large onion
4 to 5 pcs whole dried lemon
black pepper powder 1 tsp
turmeric powder 2 tsp
rice 4 cups

قورمه سبزی یعنی بوی خانه پدری، یعنی دستپخت مادر در خانه مادربزرگ، یعنی عشق در کنار هم بودن، یعنی خوشمزه ترین غذای دنیا. حالا میفهمم چرا قورمه سبزی اینقدر خوشمزه است چون با چاشنی عشق و حوصله مادر همراه است. قورمه سبزی خانه مادربزرگم را بیاد می آورد. سفره ی ساده ولی کامل خانه قدیم را بیاد می آورد. عشق و خوشی سبزی پاک کردن و بوی خوش برنج ایران را بیاد می آورد. قیلوله ظهر آرامشبخش با نجوای پرندگان درخت حیاط خانه را بیاد می آورد. مادربزرگ، این قورمه سبزی را بیاد روزهای قشنگ با تو بودن در خانه ای که دیگر نیستی پختم تا گوشه ای از عشق آن روزها را دوباره بو بکشم.

مواد لازم برای ۴ نفر
تره ٢٠٠ گرم ، جعفرى ١۵٠ گرم ، گشنيز ١٠٠ گرم ، شنبليه ۵٠ گرم و براى سرخكردن سبزى يك پيمانه روغن
گوشت گوسفندی ٣٠٠ گرم
لوبيا قرمز يا لوبیا چيتى يا لوبیا چشم بلبلى يك پيمانه
پياز ١ عدد بزرگ
ليمو عمانى ٤ یا ٥ عدد
پودر فلفل سياه ١ قاشق جايخورى
پودر زردچوبه ٢ قاشق چايخورى
نمك
برنج ٤ پيمانه
