Today we did some reverse spherification to make elderflower tonic water bubbles! First we mix (electric mixer works best) sodium alginate with elderflower tonic water letting the bubbles settle out. Then combine calcium chloride and water, using a spoon to place drops of the elderflower/sodium alginate mix inside. Let it sit for 30 or so seconds and you’ll have yourself a fun elderflower bubble.

For our drink we have muddled mango, gin and a sugared mango slice. Top with our elderflower bubble for a tasty drink and flavor combination.
