Moist Chocolate Cupcakes

Cupcakes

1 1/2 cups all-purpose flour
3/4 cup sugar (coconut sugar, maple sugar works fine)
1/4 cup unsweetened cocoa, preferably Dutch processed
1 cup water (room temperature water)
1/3 cup oil (any neutral tasting oil of your choice, I used safflower oil)
2 Tablespoon fresh lemon juice or distilled white vinegar
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon pure vanilla extract

Frosting

3 cups heavy cream (cold)
1/4 cup unsweetened cocoa powder
3 tablespoons sugar
1 teaspoon pure vanilla extract

Bake at 350° F for 20 minutes
