I'm back with another What's for Dinner! This week's meals were so delicious and incredibly easy! So sit back and enjoy and hopefully you'll find some dinner inspiration for next week!

THIS WEEK'S RECIPES:
TGIF CHICKEN FINGERS AND HONEY MUSTARD: Included in the Food from the Heart Cookbook!!
PASTA SALAD:
1 12 oz box tri-colored rotini
1 - 1 1/2 cups Italian dressing
1 English cucumber (chopped)
grape tomatoes (halved)
1 small can sliced black olives (drained)
shredded cheese
pepperoni
salt and pepper to taste
Cook rotini as directed on the box. Run cold water over it after you drain it (to cool it down). Mix together all ingredients and refrigerate for about 30 minutes before eating. *Note* it tends to soak up the dressing over time, so you may need to add more when you eat.

MEXICAN CORNBREAD:
Ingredients
2 Cups Self-rising cornmeal
1 cup vegetable oil
3 eggs (slightly beaten)
1 med onion (chopped)
1 Small can jalapeños or 5 medium fresh Jalapeños (leave seeds in as many as you like according to how spicy you like it) I leave the seed in one if I use fresh jalapeños.
2 cups shredded sharp cheddar cheese
1 can sweet whole kernel corn (drained)
Small amount of milk (around 1/4 cup) this is to loosen batter. You can use more if needed. The batter needs to be thick but not overly thick.
Mix all of the above ingredients together in a large bowl.
Use cast iron skillet it helps get edges crispy which I find most people enjoy.
Pre heat oven to 400 degrees. Coat bottom of cast iron skillet with some oil. (Use bacon grease if you have it. If not, vegetable oil is fine) Place oil coated pan in preheated oven. Once oven is preheated and oiled pan is hot place mixed ingredients into hot oiled skillet (this supposedly keeps it from sticking) . Bake at 400 degrees for 35-40 minutes. For best results make sure top is brown all the way across. Turn cornbread out onto serving dish. (I just use a dinner plate) Let sit for 5 minutes or so before slicing.
