🌟 THE BEST OF 🌟 WHAT'S FOR DINNER? | OUR FAMILY'S FAVORITE MEALS | EASY DINNER IDEAS
Welcome to a very special edition of What's for Dinner! This week has been chaotic with a ton of different appointments and errands that end right around dinner time, so filming was out of the question. BUT, I've heard from several of you recently - asking what our family favorites are. Well, here you go! We definitely have more than just these 5 dinners, but I didn't want to make a 2 hour long video, LOL. 5 of our family's favorite meals:
MANDY'S FAV - RIBS:
Heat oven to 275 F. Wash and dry slab of ribs, remove membrane. Season with salt & pepper. Put on baking pan with sides. Cover and bake for 3 - 3.5 hrs. Remove from oven, take off aluminum foil and slather with BBQ sauce. Return to oven and broil for 5-10 minutes OR put on a grill for 10 minutes. Enjoy!!
OVEN- BAKED RIBS BBQ SAUCE:
COMBINE THESE IN A BOWL
1/2 cup ketchup
2 tbsp brown sugar
1 tbsp apple cider vinegar
1 tbsp chili paste (or chili sauce)
dash of salt and pepper
SAUTE THIS TOGETHER:
2 tbsp olive oil
1 small onion, finely diced
1/2 tsp cumin
After onion is translucent and soft, pour in the BBQ sauce mixture and bring to a simmer over med-hi heat. Reduce to low and cover for about 3 minutes. Remove from heat and allow to come to room temperature before adding to ribs.
STEVEN'S FAV - FRIED PORK SANDWICHES:
•tenderized boneless pork chops
•buttermilk for marinating pork
•1 sleeve regular saltine crackers
•3 eggs for dredge
•1 cup zatarains seasoned fish fry breading
•peanut oil
•hamburger buns
•Any toppings and condiments you like.
*you can fry anyway you prefer. I’ve used a cast iron, deep fryer and my electric skillet for these and they all work fine. I use my electric skillet because it’s easier for me to regulate the temperature.
1. Marinate pork in buttermilk. 2 hours works well. They’re already very tender and any longer they will fall apart. This is also when I cut the onion, tomato and lettuce and put them In the fridge so I don’t have to worry about them later while frying.
2. Heat peanut oil to 350
3. Crush crackers and mix with zatarains. Use your hands or a rolling pin. It’s ok to leave some crumbs bigger. It adds a wonderful texture to them.
4. Prepare dredging station and Whisk eggs.
5. Start coating pork. It will have the buttermilk adhered to it and I dip it straight into the eggs like that. Then into the cracker mixture. Really press the cracker and zatarains into the pork. No meat should be visible.
6. Fry until golden brown on both sides. I wish I could give you an exact time but I just watch it and flip when golden. Maybe 3 ish minutes. I also (very slightly) adjust my temperature often too. I like to keep a steady rumbling fry around the pork.
7. Place onto paper towels to soak up grease.
COLE'S FAV - MEXICAN ALFREDO:
1 Tbsp Olive Oil
Chicken Sausage - chopped
1 lb. pasta (we used penne)
Alfredo sauce (1 jar)
1 cup of shredded cheese
3 Tbsp Taco Seasoning
Cook pasta to al dente, drain and set aside. Heat a large skillet to med-high and add oil. Add chicken sausage and brown for just about 3-4 minutes. Add alfredo sauce and taco seasoning. Stir to combine. Allow to heat thru for about 3-4 minutes. Add cheese, stirring to help it melt. Add drained pasta and stir to combine. Serve and enjoy!
