Oxtail Stew over Dirty Rice! (Falling off the Bone!)

Oxtail Stew over Dirty Rice! (Falling Off The Bone!)

About 12 to 15 pieces of oxtail.
Rinse and pat pretty dry, roll the pieces
in a flour mixture made of:
2 cups of flour
1 tsp. salt
1 tsp. black pepper (or a bit more)
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. Cajun Seasoning
3 tbsp. paprika

In a cast iron pan put 3 tbsp. canola oil
brown all the pieces and set aside.
In the pan now put 1/2 cup onions 2 tbsp.
minced garlic and cook for 3 minutes and
1/2 cup green bell pepper and 1/2 cup red bell pepper
and 2 stalks of diced celery. 1/2 cup red wine, some grape
tomatoes, 1 can Rotels diced chilies and tomatoes, 1 tbsp.
scotch bonnet pepper sauce. mixture of basil, thyme, oregano
1 tsp. Worcestershire sauce, 1 tsp. red pepper flakes
1 tsp. brown sugar / 1 can of tomato sauce (8 oz.)
Salt and pepper to taste! (Very Important!)
Simmer for 5 minutes

Layer, tomato mixture and oxtail pieces, in a 8 quart dutch over and bake for 5 hours at 225 degrees, remove meat and and big chunks
of bell peppers, red potatoes, onions and carrots.

Cook for 2 more hours and add meat back in and heat and serve
with rice on the side!
