Beans, Greens, & Cornbread (cheap, healthy, delicious)

Beans, greens, and cornbread is a complete meal that’s hearty, satisfying, cheap, relatively heathy, good leftover, and can be made vegetarian with a couple minor tweaks. It ticks so many boxes, so if you want to save money on food, give it a try!

[Collard Greens Recipe]

5 oz bacon, chopped
3 pounds collard greens, washed, destemmed, and torn into pieces
1/2 tsp red pepper flakes
8 cups water

Simmer the bacon in the water in a large pot for an hour, partially-covered.
Add the greens and pepper flakes, and simmer partially-covered for 15-45 minutes.
Reduce the liquid at the end by boiling until the greens are moist, but not soupy.

CORNBREAD:

1 1/4 cups cornmeal $0.34
3/4 cup flour $0.11
2 TBS sugar $0.05
2 tsp baking powder $0.13
1/2 tsp baking soda $0.01
1/2 tsp salt $0.01
2 eggs $0.33
2/3 cup milk $0.15
2/3 cup buttermilk $0.60
3 TBS butter $0.42

Total price $2.14

1 1/4 cups cornmeal
3/4 cup flour
2 TBS sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 salt (*I use 1/4 tsp)
2 eggs
2/3 cup milk
2/3 cup buttermilk
3 TBS melted butter

Preheat oven to 425 degrees F. Grease an 8x8 or 9x9 dish with butter.
In a large bowl, mix the dry ingredients.
In a 2 cup liquid measuring cup, measure in the milks. Add the eggs, and whisk.
Add the milk-egg mixture to the dry ingredients and mix.
Add the butter and mix until smooth.
Pour batter into pan and bake for 20-25 minutes or until a toothpick comes out clean.
Cool on a wire rack for a few minutes before cutting into it.
