hazelnut milk tea
Last time I was in Portland, I went to a lovely tea shop that had hazelnut milk tea on the menu. I was intrigued so I ordered it—and IT WAS SO GOOD. So after a few attempts, I’ve invented my own version of hazelnut milk tea that I think comes pretty close to the version I had at the tea shop and is also very easy to make.
Recipe (makes 2 big mugs—I only made 1 big mug in the video, but it’s very difficult to make that small an amount of whipped cream, so I’m giving the recipe for 2 mugs)
2 mugs milk (use the mugs you’ll drink out of to measure—this should be about 24 oz milk total)
2 tsp assam black tea leaves (or 3-4 tsp other black tea leaves)
2 TBS hazelnut syrup
¼ tsp hazelnut extract
1/3 cup heavy cream
1 tsp powdered sugar
1 tsp ground toasted hazelnuts
Add the tea leaves and milk to a heavy-bottomed pot on medium-low on the stove. Heat slowly to a low simmer, stirring occasionally (should take about 10 minutes.)
For the whipped cream: beat the cream, powdered sugar, and hazelnut extract together until stiff peaks have formed.
Strain the tea into 2 mugs and add a tablespoon hazelnut extract to each. Top each mug of tea with half the whipped cream and ground hazelnuts. Drink immediately.
