Easy Scones with Strawberries
Rich, fancy biscuits that are easy to make. This recipe makes 4 scones. Day-old scones are okay reheated, but not as good as fresh.

The Recipe:
Preheat oven to 425.
Mix in a bowl:
-1 cup flour
-1-3 TBS sugar (if the scones will be eaten plain or with butter, use 3 TBS.)
-2 tsp baking powder
Add:
-3 TBS salted butter
And work into the flour mixture with a fork until evenly incorporated. There should be little chunks of butter.
Optional addition:
-1/4 cup craisins, currants, raisins, or finely minced dried fruit of your choice.
In a mug or small bowl, whisk together:
-1 small egg (or I sometimes use just the yolk of a large egg)
-1/4 cup cream (if using a whole small egg, reduce this to 1/8 cup)
Pour liquid mixture into flour mixture (don’t rinse out the bowl!). Gently work it in. DON’T OVERMIX. Form dough into a thick disc and place in a shallow cake pan or a cheap pie tin. Cut into quarters and separate the pieces from each other. Coat the scones with the residual egg/cream mixture in its mixing vessel and sprinkle with sugar. Bake for 10-15 minutes or until the scones are golden brown.
Possible toppings:
Whipped cream, fresh fruit, Nutella, jam, honey, butter.
