AUTHENTIC GREEN CHILE CHICKEN TAMALES

Hello my beautiful fam! Welcome back to my kitchen first of all I want to thank you for being part of our family, and allowing me to be part of yours!!!! today I’m going to share with you how to make a very easy and delicious green chile chicken tamales, seriously the best, you can adjust the spiciness by adding more chile serranos or by not adding them! Today I made the masa using my stand mixer, let me tell you that is soooo much easier than using your hands, if you don’t have you don’t worry you can use a hand mixer as well( that’s how my mom makes her masa, she says because her hands can’t do it nomore) but if you don’t have neither Dont worry you can make this delicious recipe just how I do it in my precious tamale video! ☺️ keep in mind like every recipe and every household there are tons of variations that make this delicious recipe, you can always adjust it to your taste, I really hope you enjoy it as much as me and my family do, and as always if you do please don’t forget to give me a big thumbs up, comment down below your thoughts and if you new to my channel please hit that subscribe buttons so you can be part of our family!!!!!!

👍🏼I’m using the Vitamix a 3500
👍🏼Covered Dutch Oven - Calphalon® Premier™ Hard-Anodized Nonstick 8.5 qt
👍🏼dishes and utensils are from bed bath and beyond, target or Walmart

What can go wrong???
Not soaking the corn husks long enough can cause the masa not to stick, soak for at least 2 hours
Not adding enough liquid can cause your masa to not spread easily
Over boiling your tomatillos can cause your sauce to taste bitter, DO NOT let them pop

‼️‼️Tip!!! Be patient😉 making tamales is a process and it’s time consuming don’t matter what filling you making , get the extra hands to spread the masa on the corn husks
Dont overcook your chicken!

Ingredients: depending on how much masa and filling you use for each tamal, it will depend on how many tamales you get, I got around 35 tamales 🤩

For our chicken:
7lbs half breasts with ribs or thighs( 📌just make sure you use bone, it will help your chicken not to be sooooo dry, over cooked chicken is not enjoyable 😁)
1/2 onion
Garlic head cut in half
4 bay leaves
Salt

Masa: 6 cups Maseca for tamal
1 1/2 cup lard
2 tsp baking powder
4 1/2 - 4 3/4 cup beef broth/ water
Salt

Green salsa: 14 tomatillos
2-5 chile serrano or jalapeños
6 Anaheim/ hatch chiles
1/2 white onion
3 garlic cloves
1/2 bunch of cilantro
1/2 tsp cumin
1/2 tsp whole black pepper
1/2 tsp oregano
3 cloves
3 tbsp chicken bouillon
1 serving of love 💕
