QUINOA SOUP | VEGGIE / VEGAN QUINOA SOUP | Peruvian andean dish

I'm so glad to bring you our first Veggie/Vegan recipe and this is QUINOA SOUP.
Quinoa soup Is originally from the South American Andes, being the main ingredient of it the Quinoa, which is cultivated in the highlands of Argentina, Bolivia, Colombia, Ecuador and of course the country where this grain is originally from… Peru.
Other ingredients you find in this soup are potatoes, leek, onion, celery, carrot and depending of what you want, you can add some pork, chicken or beef but today, I want to make a vegetarian soup.
Ingredients:

• 1 medium Onion chopped in brunoise
• ½ cup of leek chopped in cubes
• 3 garlic cloves chopped in brunoise
• ½ cup of white quinoa
• 8 cups of vegetable stock
• 1 stick of coriander
• ¼ tsp of ground cumin
• ½ tsp of dry oregano
• ½ cup of chopped carrot
• 1 cup of squash
• 1 cup of broad beans
• 1 potato chopped in cubes.
