This is how a dish, that was born because of Chinese migration to Peru over a hundred years ago, became the most famous dish of modern Peruvian cuisine.

Normally, we don't use any sauce like the "aji colorado" I use for the meat, but I really think that adds an incredible flavor to the whole preparation... As always, I encourage you to add an extra touch and make your own version of this dish.
