Indian Street Food | Vada Pav and Papdi No Lot | at "Shree Siddhivinayak Vada Pav" | Bardoli | India

Whilst I was visiting Bardoli Town (in Gujarat, India); I simply had to stop and get something to eat from these guys. I also love their beautiful & Godly name: "Shree Siddhivinayak Vada Pav".

BATATA VADA PAV RECIPE INGREDIENTS:
The spiced potato filling is made using:
* Skinned, boiled and Mashed Potato,
Which is tempered with a "bhagar / vaghar":
* Oil is heated up; to which is added:
* Mustard Seeds
* Tumeric (Haldi)
* Garam Masala
* Coriander Powder (Dhana)
* Salt (Namak)
* Garlic (Lasun)
* Green Chilli
* Red Chilli Powder

All of the above are quickly fried together & then added (whilst still hot) to the mashed potato & mixed together.

The spiced up Mashed Potato mix is then rolled into balls, dipped in a Gramflour Batter and then deep fried until crispy & golden. (Note: when making the potato balls, the key is to make the balls tight). At this point of preparation' the fried balls are called "Batata Vada".

The Batata Vada Gram Flour Batter is made using:
* Gram Flour (Chickpea / Besan flour)
* Salt (Namak)
* Cold Water

Oil and a Sukhi (dry) Red Chilli, Garlic and Coconut chutney is heated on the tawa griddle and then a burger bun (Pav) is toasted with the Chilli Oil mix. The Vada is then placed into the Bun and then served up with:
* Sweet Tamarind (Imli) Chutney

* Green Garlic, Chilli and Coriander Chutney

* Also served up with batter fried green chilies on the side to add extra flavour to the dish.

The humble Vada Pav is one of the Indian sub-continents most famous and favourite of street foods. Vada Pav and is especially popular in Mumbai and it's beaches such as Juhu Chowpati.

Bateta Vada + Soft White Roll = Vada Pav

In case you don't know, a Vada Pav is like a vegetarian potato burger (a Bateta Vada in a soft bun) served with tangy tamarind & date + Green Chilli & Coriander sauces, you could say that Vada Pav is India's version of the "Great British Chip Butty".

Unlike some places there was nothing hidden and no secret to the recipe here because everything is made in the open street kitchen in full view of customers.

Vada Pav or Wada Pau however you say it (or spell it) it is utterly delicious............these guys make it look very easy, but it takes many years of skillful practice to make a perfect Vada Pav like you see here.

Vada Pav is an ubiquitous and popular street food in India.
