More Poolish Experiments

Today we continue with our Poolish pizza dough experiments. We try a 12 hour pre ferment, along with 18 hours in the ridge and 6 further hours at room temperature. The end result was a super soft fluffy crust that was really light and super easy to chew and digest.

Again I use the Famag IM5S to make the dough, hardly any folding was required, the dough was pretty much ready to go straight from the mixer.
