LE5 Stagioni Superiore 74% Hydration

Here I move on in the LE5 Stagioni Superiore hydration saga. Today I go for 74% hydration after trying 70%, 72%, and maxing out at 80%. The dough wasn’t too hard to handle, however balling was a challenge and 4 of the 6 pizzas managed to stick to the pizza peel one way or another. The dough had a lovely light puffy crust that just melted in the mouth.
