50% Poolish Continued

If you watched my last video you know that I was making some 50% Poolish and that I bailed out on it as it was unmanageable. I couldn’t stretch and fold as it was just too sloppy. Here you can see the making of the dough and the point where I gave up on it and just put it in the fridge. I was astounded with the texture and the size of the crust when I cooked it. I expect it to be a fail due the little amount of time I spent on the dough, but the results were mega.

I’m really impressed with Poolish pizza dough, it makes stunning pizzas which have light airy crusts that are really nice to eat. I might even make Poolish my go to pizza dough.
