Recipe :
Ingredients (serves 2):
Overnight Oats:
1 cup (100g) rolled oats (or Linwoods Energy Overnight Oats for added chia and B vitamins)
3/4 ripe banana, mashed
1 cup (240ml) plant-based milk (e.g., oat or soya milk)
2 tbsp vegan natural or Greek-style yoghurt
3/4 tsp ground cinnamon
Pinch of salt
Topping:
2 tbsp Biscoff spread, melted
1-2 Biscoff biscuits, crumbled (optional)
1/2 ripe banana, sliced
Instructions:
In a bowl, jar, or container, mix rolled oats (or Linwoods mix), mashed banana, plant-based milk, vegan yoghurt, cinnamon, and a pinch of salt until well combined.
Cover and refrigerate for at least 1 hour, preferably overnight, to allow the oats to soften and absorb the liquid.
When ready to serve, melt Biscoff spread in a microwave-safe bowl for 20 seconds until runny.
Stir the oat mixture to ensure even consistency. Add a splash of milk if too thick.
Top with sliced banana, drizzle with melted Biscoff spread, and sprinkle with crumbled Biscoff biscuits, if using.
Serve immediately and enjoy. Store in an airtight container in the fridge for up to 3 days (add toppings just before serving for best texture).
Note: Use certified gluten-free oats for a gluten-free option. Adjust sweetness with a teaspoon of maple syrup if desired. Perfect for October 12, 2025, as a cozy fall breakfast.
