🌶️ HIGH PROTEIN ROASTED RED PEPPER PASTA – vegan, creamy, 20g+ protein/serving! Roast veggies for sweet, smoky flavor, blend into silky sauce — comfort food that's meal-prep ready & kid-friendly. Perfect after a busy day!

300g pasta (any shape)
3 red bell peppers, chunked
200g cherry tomatoes
1 onion, quartered
1 head garlic, top cut off
2 tbsp olive oil
Salt & pepper to taste
1 tsp dried oregano
½ tsp chilli flakes (opt.)
100g cashews, soaked
3 tbsp nutritional yeast
Juice of 1 lemon
½ cup pasta water
👉 Roast @ 200°C for 30 mins → cook pasta → blend sauce → toss with pasta water → serve hot!
Keeps 3–5 days in fridge (reheat in micro).
