🍜 SESAME CUCUMBER NOODLES – the ultimate cold, refreshing summer lunch! Chilled soba noodles + crisp cucumber + punchy sesame-tahini-sriracha dressing = flavor explosion in every bite. 10-minute, no-cook, perfect for meal prep (stays fresh & crunchy!).

📋 FULL RECIPE (2–3 servings):
Sesame Dressing:
¼ cup tahini
1 tbsp sriracha
2 tsp sugar (or 3 tsp maple syrup)
2 tbsp dark soy sauce
1 tbsp sesame oil
1 tbsp rice vinegar
2 cloves garlic, minced
1 inch fresh ginger, grated
50 ml cold water
Salad:
150 g dry soba noodles (or rice noodles)
½ cucumber, seeds removed & half-moon sliced
2 handfuls fresh coriander, chopped
5–6 spring onions, chopped
Sesame seeds for topping
Cook noodles → rinse cold → whisk dressing → toss with cucumber, coriander & spring onions → sprinkle sesame seeds → devour cold!
Keeps 3–4 days in fridge – perfect meal prep.

Pro tip: Rinse noodles thoroughly = no sticking!
