Peanut Butter and Banana Muffins

PEANUT BUTTER AND BANANA MUFFINS
Makes 12 Muffins

INGREDIENTS

For the Muffins:

250 grams bread flour
10 grams baking powder
2.5 grams baking soda
5 grams fine sea salt
500 grams mashed lakatan or cavendish bananas
150 grams light brown sugar
100 grams whole eggs
75 grams vegetable oil
100 grams creamy peanut butter
10 grams pure vanilla extract
60 grams chopped dry roasted salted peanuts

For the Topping:

30 grams light brown sugar (2.5 grams per muffin)
30 grams chopped dry roasted salted peanuts (2.5 grams per muffin)
120 grams semi-sweet chocolate chips (10 grams per muffin)

PROCEDURE
