GRILLED CHEESE SANDWICH TWO WAYS WITH MS. JANICE DE BELEN

INGREDIENTS
For the Tomato Jam Express:
2 tablespoons extra virgin olive oil
3 small red onions, peeled and coarsely chopped
250 grams cherry tomatoes, each one quartered
2 cloves minced garlic
1 tablespoon red wine vinegar
1 tablespoon raw honey
Fine sea salt and ground black pepper to taste
For the Sandwiches:
200 grams picnic or slab bacon, cut into 2.5 cm pieces
4 slices sourdough bread
200 grams mozzarella cheese slices
200 grams fontina cheese slices
