Ingredients:
1/2 cup rolled oats (45g)
1/2 cup quick cooking oats (50g)
1/2 cup shredded coconut (75g)
1 tbsp unsweetened cocoa powder
1/2 cup natural peanut butter (125g)
1/3 cup chopped dark chocolate (65g)
3 tbsp honey or maple syrup
1/4 cup unsweetened applesauce (65g)
1/4 cup milk, dairy or non-dairy (60ml)
1 tsp vanilla extract
flaky sea salt for sprinkling (optional)
NUTRITIONAL INFO (per cookie):
152 calories, fat 8.5g, carb 16.2g, protein 5g
Preparation:
Sprad your oats onto a baking pan and bake at 350F (180C) for 5-10 minutes, just to toast your oats and give some flavor.
In a saucepan, add room temperature peanut butter, chopped dark chocolate, your sweetener, applesauce and milk, and place on medium heat, until melted and smooth.
Take off the heat, add the vanilla and cocoa powder and stir until the cocoa powder is all dissolved.
Add the oats and shredded coconut, and stir well, until the sticky mixture is formed.
Scoop the cookie mixture (about 2 tbsp) and place onto a lined baking tray, and flatten into a round circle using a back of your spoon. You'll end up with 12 equal balls.
Sprinkle with some flaky salt if you want.
Place in the fridge for 2 hours, or overnight, to set and let the oats to soften.
Enjoy!
