LE5 Stagioni Superiore 72% Hydration

Here we revisit the LE5 Stagioni Superiore saga. Previously I’ve used this flour to make pizza dough at 70% hydration and that was absolutely amazing, the dough looked like it would easily handle 80% hydration, so I gave that a try and the results were disappointing from a handling point of view. I made 6 dough balls and only managed 3 pizzas I think it was. It was crazy difficult to handle.

Today we are nudging up to 72% hydration to see if this flour is still easy to handle or if it’s gone to pot and is a tough customer. If all works out then the next stop will be 74% and we will keep pushing up 2% till it fails. Enjoy
