Creamy Pasta from Canned Sweetcorn | Plant-Based Cacio e Pepe Recipe
This is my all-time favourite creamy pasta recipe, its so delicious and easy (made from canned sweet corn) that I can have it everyday.

🍝. Homemade pici pasta(for two people)
00 Flour* 120g
Semolina* 120g
Lukewarm water 120g
* If you have difficulties finding 00 flour and semolina, you can also replace them by just 240g plain flour.
🌽. Sweet corn cacio e pepe sauce
Canned corn 150g
Miso paste 1/2 tbsp
Nutritional yeast 5 tbsps
Vegetable stock** 120g
Olive oil
Black pepper
Lemon juice
Salt if needed
** Either homemade or from vegetable stock cube.
🍳 Methods
1. Making the pici dough: Place 00 flour and semolina in a bowl, mixed with lukewarm water until a dough is formed. Knead until dough surface is smooth (about 10 mins), cover with cling film and rest dough for 5 mins.
2. Shaping the pici: Flatten the pici dough with a rolling pin, and cut into 5mm wide strips. Using fingers or palms of your hand, apply even pressure and roll out the dough strip into thick round noodles shape.
3. Preparing corn cacio e pepe sauce: Add sweet corn, miso, nutritional yeast and vegetable stock to a blender, and blend until smooth.
4. Warming up the sauce: Add olive oil in a pan, pour in the prepared corn sauce, add a large amount of black pepper and little lemon juice. Add more salt if needed.
5. Cooking pici: Cook the pici in a large pot of salted boiling water for 3-5 mins, drained and add to the sauce in step 4. Mix well until pici is well coated by the sauce. If the sauce is too thick, add some water.
