- 2 kg of waxy potatoes
- 100 grams of black truffle

Ingredients for the truffle mayonnaise:
- 40 grams of egg yolk
- 40 grams of black truffle
- 20 grams of white wine vinegar
- 20 grams of mustard
- 3 grams of salt
- 3 drops of tabasco
- 300 grams of neutral oil
