🥩 Chilli Lime Chicken Marinade:

1000g boneless, skinless chicken thighs

1 tsp salt

1.5 tsp black pepper

30g minced garlic

1.5 tsp chili flakes

2 tsp smoked paprika

20g honey

Zest + juice of 1 lime

20g light soy sauce
⏱ Marinate as long as possible
🔥 Oven or air fry at 200°C / 400°F for 20–22 mins

🥥 Coconut Crusted Potatoes:

1000g potatoes (cubed)

25–30g shredded coconut

Spices: black pepper, smoked paprika, cumin, parsley, garlic powder

3 tsp olive oil
🔥 Roast or air fry at 200°C / 400°F for 20–24 mins until crispy

💚 Ahi Verde Creamy Sauce:

150g Greek yogurt

50g light mayo

10g honey

1 green chili (de-seeded)

Handful cilantro

Salt & pepper to taste

🥭 Fresh Mango Salsa:

200g cucumber (de-seeded)

150g red onion

200g ripe mango

150g red & green bell peppers

1 tbsp cilantro
