Armenian Cooking With Mama EP:3/ Gata

Armenian Grandmas are the best cooks ever! This recipe was inspired by the many grandmothers who have made me Gata many times. Gata is known as a dessert served during easter time. At my church, one Grandma makes 10 or more of these and sells them for 15 dollars each because of all the hard work and time that is required to make Gata. If you ever want to impress an Armenian, make them Gata and they will love you forever. This is my absolute favorite treat to eat spring time. Enjoy this recipe.

Dough Ingredients:
1 Tbs Dry Yeast + 1 Tbs sugar + ½ Luke Warm Water
1 Cup Sour Cream
1 Egg
1 Tbs Vegetable Oil
4 Cups sifted flour
1¼ Cups Unsalted Butter (Room Temperature)
½ Tsp salt
⅔ Cup Granulated Sugar
1 Tsp Vanilla Extract

Filling Ingredients:
1 Cup butter (melted)
2 Cups sifted flour
1¼ Cups of Sugar
1 Tsp Vanilla

Glaze Ingredients:
2 Egg yolks
1 Tsp yogurt

Directions:
1. Mix yeast, sugar, and water and let it sit for 5 minutes.
2. Use paddle to mix flour, sugar, salt, and butter until crumbly.
3. Then add egg, vegetable oil, and vinegar to the sour cream then add to the flour mixture.
4. Mix until it clumps together and add yeast and vanilla
5. Then change to dough hook and knead until you have a nice and soft but not sticky pliable dough.
6. Form into a ball, cover with plastic wrap, and refrigerate for 6 hours or overnight.
7. Before you take the dough out of the fridge begin making the filling.
8. Mix butter and flour with whisk in the stand mixer.
9. Then add sugar and vanilla.
10. Stir for one minute so the mixture is not sticky and set aside.
11. Preheat oven to 350 F
12. Split the dough into 4 parts and flatten each one to same thickness and width.
13. With this you are going to be making 2 big sweet breads. You will put half of the filling on top of one of the four pieces of dough.
14. Then you will put the other side of dough on top and pinch off the outsides.
15. Then you may prick the top of the Gata with a fork in your desired design.
16. Then layer on the egg-wash and bake for 20-30 minutes or until golden brown.
17. Let it cool before serving, and enjoy!
