Breakfast- French Toast

- 1 cup of almond milk
- 1 tbsp maple syrup
- 2 tbsp flax meal
- ½ tsp vanilla extract
- ½ tsp ground cinnamon
- pinch of sea salt
- 6-7 slices of french bread (lightly toasted and ~ 1 inch thick)

Method:
1. Combine all of the ingredients (minus the bread) into a mixing bowl and let sit for up to 10 minutes; during this time, lightly toast the bread in the toaster and let cool.
2. After the bread has cooled, heat a skillet to medium high heat and start dipping the bread in the mixture, Making sure each side is coated but not soaked (you don’t want the french toast to be soggy).
3. Cook the toast on each side for about 3-4 minutes and then flip.
4. Transfer toast to a plate and repeat with remaining slices.
5. Sprinkle your creation with powdered sugar and maple syrup and enjoy!

Snack- Chocolate-Banana Cookies

Dinner- Refried Bean Quesadilla
- Large flour tortilla
- Refried beans of choice (I love black beans!)
- Veggies of choice (I used tomatoes and onion)
- Vegan cheese
- Vegan sour cream
Method:
1. Place all of the ingredients on one half of the flour tortilla.
2. Fold over the tortilla and bake in the oven at 385 degrees F for about 15-20 minutes, or until cheese is melted and the quesadilla is cooked to your liking.
3. Cut into cute triangles and enjoy with some sour cream or guacamole!
