VEGAN MAC&CHEESE RECIPE!

Mac&Cheese Recipe
For the base:
* brown rice pasta or pasta of your choice
For the sauce:
* 1/2 cup cashews
* 1 cup cooked butternut squash
* 2 tbsp nutritional yeast
* Dash of salt
* 1 cup water
Procedure:
1. Peel and cube the butternut squash and cook for about 30-40 minutes at 450 degrees Fahrenheit (*note- there are seeds in butternut squash so you will have to scoop the seeds out before you cube it!)
2. While that is cooking, bring a pan of Water to a boil and then add your pasta of choice, stirring occasionally so it doesn’t stick to the pan.
3. To make the sauce, add 1/2 cup of cashews and nutritional yeast. Blend until a meaty texture forms.
4. Once the butternut squash is done cooking, add 1 cup of butternut squash and 1 cup of water. Blend until combined, adding the salt to taste as well!
5. Once you’ve drained the pasta, add it back to the pan and pour the cheese mixture on top.
6. Stir together until well combined.
7. Serve with a side of steamed broccoli or other veggies!
8. Enjoy!!!
