芝麻辮子手撕麵包 Sesame Braid Pull-apart Bread|BAKEwithCarmen
手撕麵包適合家用小酵箱做份量較多麵包的需求,如果沒有攪拌缸,可以用麵包機或手搓法,方法可以參考我的其他影片有介紹。
✿食譜份量✿(直接法)
高筋麵粉 Bread Flour 300g
糖 Sugar 20g
鹽 Salt 3g
雞蛋(大) Egg(L) 1
鮮酵母 Fresh Yeast 9g (乾酵母 Dry Yeast 3g)
冰水 Ice Water 60g
冰牛奶 Cold Milk 70g
無鹽牛油 Unsalted Butter 30g
表面 Topping:
白芝麻 適量 White Sesame in moderation
無鹽牛油 Unsalted Butter 25g
160°C/200°C 或 180°C 15mins
