The best steam bun made in stand mixer - spongy, springy and delicious

Ingredients:
All purpose flour 3 cups + ½ cup + ½ cup (450g +75g+75 g)
1 cup/250 G warm water + 1tsp/5g sugar + 1 tsp/4g yeast
¼ cup sugar ( adjustable to your preference)
Knead the dough three times:
The first kneading to generate s soft dough;
Let the dough rise to increase half of the volume, knead the second time;
Let the dough rise to double the volume, knead the third time.
Form a long log and cut into small pieces. Let them rest for 10 to 15 minutes before steaming.
About my mixer:
I use KitchenAid 6 Qt. Professional 600 Series with 600w power. If your mixer is not powerful enough you may find out it cannot handle a hard dough in the second and third kneading. You may add a bit more water or add less flour to get a softer dough. The finished product will be softer.

I have to share this steamed bun recipe. Whoever try this bun has asked me about the recipe. The bun is spongy, springy and chewy. The more you chew on it, the more flavor and sweetness it will release. Traditional hand-made bun like this requires a lot of hard kneading work. But here by using a stand mixer, you can easily make the best steam bun you ever have.
Left-over can be kept in a zip bag and store in refrigerator for a couple weeks. Take them out and steam again, they will taste as good as freshly made.
For those who are trying this recipe, please make sure your stand mixer can handle a hard dough. The mixer I use is KitchenAid 6 Qt. Professional 600 Series which has 600 w power. The third kneading is pretty heavy. You can do a couple things to make kneading easier:
reduce dry flour amount, knead at lowest speed, take several minutes break during kneading...
