Dry-brining is an easy way to pack your chicken, turkey, duck or other birds with lots of flavor. Better yet, you can skip the fuss and mess of wet-brining. Salting poultry ahead of cooking helps denature protein bonds, adds moisture, aids browning, flavor, and crispiness.
