How to Better Salt a Tomato

Don't get stuck with watery, mushy tomatoes. This quick tip helps you get beautifully flavorful and extra juicy tomatoes. Brining isn't just for meats, the same principles that bring salt and moisture throughout your proteins can be applied to fruits and vegetables.

This works great for when you want to salt foods in advance and avoid them swimming in a sloppy mess.

Direct contact of salt crystals on the delicate flesh of a tomato can wreak havoc on the cells of the tomato. They give up their moisture - deflating cell walls, releasing water, destroying texture.

You can start to learn the different qualities of salting foods in different ways, and begin to layer in salt just like any other flavor.

Have you been salting your tomatoes all wrong? Try brining.

Some people have asked about the knife in this video: it's a Shun Premiere 6" Chef. Very serviceable and it won't break the bank. I really love the way it feels in my hand... and that's the most important thing. Every hand is different.
