Instant Pot® Creamless Creamy Tomato Soup for Two

Soup
1 cup chopped sweet yellow onion
1 cup chopped celery stalks
2 garlic cloves, minced
1 cup cubed sweet potato (1/2-inch cubes) to mellow acidity
1 (28-ounce) can whole peel tomatoes
1/4 cup hulled hemp seeds for creaminess

Croutons
3 slices whole grain bread, crust removed, cubed
2 pinches garlic powder
2 pinches onion powder

[SAUTE MODE] Cook onion and celery on normal (medium) heat for 5 minutes; add a tablespoon of water to prevent sticking and deglaze the bottom of the pot. Stir in garlic, sweet potato, and tomatoes with their juice.

Change cooking mode to [PRESSURE COOK], cancel Keep Warm mode, and set cook time to 1 minute.

While waiting on soup to cook, season and toss bread cubes with garlic and onion powder. Spread evenly on nonstick pan and toast in toaster oven until golden. Remove from heat; set aside.

Once cooking time is finished with the iPot, turn steam release handle to venting to release pressure. Remove lid and stir in hemp seeds. Use either a Vitamix, drink blender, or an immersion blender to blend soup smooth. Top individual port with croutons before serving.
