Vegan Blueberry Muffins Recipe Baked in Donut Pan, Makes 10 donuts
1/2 cup applesauce
3/4 cup plain non-dairy milk
1 Ener-G Egg Replacer egg
2 cups bread flour
2/3 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon sea salt
1 cup thawed, frozen blueberries, rinsed and drained

Mix wet ingredients. Add dry ingredients. Stir just until flour is moistened, DO NOT overmix the batter. (Small lumps of flour are a good thing for muffin baking.) Fold in blueberries. Scoop batter into donut pan, filling donut-cup halfway up.
Bake at 375ºF in a convection oven for 15 minutes, until lightly golden brown.
OR
Bake at 400ºF in a conventional oven for 12 to 15 minutes, until lightly golden brown.
