Resep Ayam Rebus Jahe (untuk 5 porsi)
Bahan marinasi ayam:
850 gr ayam paha utuh
1 ½ sdm garam
Bahan lainnya:
2 liter air
20 gr jahe, geprek
1 batang daun bawang, potong besar
2 sdt garam
2 sdt kaldu jamur / penyedap
2 sdt gula pasir
¼ sdt merica
Bahan minyak bawang putih jahe:
70 ml minyak
30 gr jahe
10 siung bawang putih
1 sdm minyak wijen
½ sdt garam
¼ sdt kaldu jamur
Pelengkap:
Nasi putih
Daun ketumbar
Timun
Langkah:
1. Marinasi ayam dengan garam, diamkan 10 menit lalu bilas dengan air hingga 3 kali
2. Panaskan air di dalam panci hingga sedikit mendidih lalu masukkan ayam, daun bawang, jahe, garam, kaldu jamur, gula pasir, dan merica. Masak selama 15-18 menit di api kecil tanpa ditutup
3. Iris jahe lalu masukkan ke dalam food processor, haluskan
4. Masukkan bawang putih haluskan kembali. Di dalam wajan, panaskan minyak lalu masukkan jahe, bawang putih yang sudah dicincang, garam, dan kaldu jamur, tumis hingga sedikit kecokelatan
5. Matikan api kemudian tambahkan minyak wijen, aduk rata dan sisihkan
6. Masukkan ayam ke dalam air es. Diamkan selama 3 menit lalu suwir-suwir
7. Masukkan tulang ayam ke dalam kuah, masak kembali di api sedang kecil
8. Susun ayam lalu tuang sedikit kuah dan minyak bawang di atasnya
9. Ayam rebus jahe siap disajikan

Poached Ginger Chicken Recipe (yield 5 servings)
Marinated Chicken ingredients:
850 g whole chicken thigh
1.5 tbsp salt
Others:
2 liter water
20 g ginger, pound
1 pc green onion, sliced into large pieces
2 tsp salt
2 tsp mushroom stock powder / MSG
2 tsp sugar
¼ tsp pepper
Garlic Ginger Oil ingredients:
70 ml oil
30 g ginger
10 clove garlic
1 tbsp sesame oil
½ tsp salt
¼ tsp mushroom stock powder
Add-ons:
Rice
Cilantro
Cucumber
Steps:
1. Marinate the chicken with salt for 10 minutes, then rinse 3 times with water.
2. Heat the water in a pan until it’s simmering. Add the chicken, green onions, ginger, salt, mushroom powder, sugar, and pepper. Cook for 15-18 minutes on low heat without covering.
3. Slice the ginger. Add into the food processor and blend.
4. Add garlic and blend again. In a pan, heat oil. Then, add the chopped ginger and garlic, salt, and mushroom powder. Sauté until lightly browned.
5. Turn the heat off and add sesame oil. Stir and set aside.
6. Place the chicken into an ice bath for 3 minutes, then shred the meat.
7. Return the bones into the stock. Cook again on low heat.
8. Plate the chicken. Pour a bit of stock and add Garlic Ginger Oil on top.
9. Poached Ginger Chicken is ready to serve.
