【西雅图美食】第81期:油炸萝卜豆腐素丸子 How to fry radish and tofu vegetable balls

Recipe, Ingredients, and Closed Captions:
"Hello, Everybody! I’m Meishi Jiejie.
Today let's fry radish and tofu balls
White radish 1000g
Granulate the radishes using the food processor
Carrot 150g
Water chestnut 200g
Cilantro stalk 60g
Cut the cilantro stalks into small pieces
Firm tofu 1
Crumble the tofu using your hand
Green onion 1
Cut the green onion into small pieces
A little bit of ginger
Force the water out of the radish with 1 tablespoon of salt
Squeeze the excess water out of the radish
Add in tofu
Add in carrots
Add in water chestnuts
Add in cilantro
Add in 3 eggs
Add in 1 tablespoon of the five-spice powder
Add in 3/4 tablespoon of salt
Add in half a cup of flour first and mix them well
Add in another half cup of flour
Add in half a cup of the potato starch, a little at a time
Mix them very well
Add in green onion and ginger
Add in 2-3 tablespoons of vegetable oil
Stir well and ready to make balls
If some friends who are new to learn how to fry balls, you can make the balls like this way in advance
Add in plenty of oil in the pan, turn on the high heat
Recommend: peanut oil is the best, it will make the fried balls more fragrant
Test the oil temperature with the chopstick
If there are small bubbles around the chopstick and they rise slowly, then you know the oil temperature is reached.(about 160c)
Turn to the medium low heat after the oil gets about 160 degrees celsius
Add in the balls slowly with a tablespoon
Wait till the shell of balls are sold before stirring
Use the chopsticks to gently move them away from each other
After the balls float, you can stir frequently to cook them evenly
When the balls’ color turn to golden brown, they are done
Drain excess oil as much as possible
You can also do it this way: squeeze and fry at the same time
Squeeze the ball with your left hand, put the ball in with a spoon using your right hand
The later operations are the same as before
Oil temperature can be adjusted according to your needs
Whether to refry or not is based on personal preference
